FROM THE SILK ROAD TO SHANGHAI
North Indian cuisine has its origins in ancient trade routes which meandered from China through India and into Central Asia. Epic journeys undertaken along these roads set in motion the influence of Central Asia on Indian food, culture and religion.
The restaurant’s layout invites guests to recreate these historical Silk Road travels, from the façade of a traditional Chinese house to a Buddhist monastery, through the Sun Temple of Konark and the Shiraz monuments of Persia, and culminating in a Turkish-style pavilion - this section represents Central Asia, birthplace of the clay oven, and the origin of tandoori cooking.

Since 1994, we have been grounding our refined yet classic North Indian food in tradition, authenticity and quality. Time-honoured tandoori dishes, regional specialities and sophisticated plates exclusive to the Indian Royal Palace are served within a historical setting which tells the story behind North India’s richly diverse cuisine.
North Indian food draws inspiration from the ancient Mughal Empire who famously married Indian flavours with the cooking techniques and recipes of Central Asia. This cultural fusion remains evident in the present-day regional food of not only Northern India but also Bangladesh and Pakistan, and is a passion of Executive Chef Sanjay Tyagi and his team of exclusively North Indian chefs.
